Hello, my name is Jaime Alvarez Molina, I’m from Ollantaytambo and I study gastronomy at the Khipu Institute. I am 18 years old and I’m currently in my 4th semester. I chose gastronomy because I love to create dishes and discover the variety of ingredients and methods that my country has to offer, which I hope to put into practice and share with the world. In my free time I like to read and learn more about gastronomy. I love everything about Mosqoy- the coexistence, the friends I have made, and the trips we take to weaving communities where I get to be a Quechua translator, which allows me to continue nourishing our mother tongue which is the Quechua language. Thank you for your support in our studies and our futures.

hey Jaime!!!!
keep it up in your studies!
Hey Jaime! Good luck in school.
*Hello and good evening friends! I am hoping that each and every one of you are doing well. I am pleased to tell you that today I am feeling really happy in Casa Mosqoy, here in Cusco, Peru in the company of all of my fellow students and volunteers from Canada and the U.S. We are coordinating a gastronomy project with which we will raise funds to go on a trip with all of the Mosqoy students that live at Casa Mosqoy. We will go to the National Park of Manu, the jungle, with Mosqoy Staff and Ashli, the Mosqoy founder, which arrived here in Peru three days ago. She told us she will come to dinner at Casa Mosqoy every Monday but after arriving she has come almost every day! Haha! Also, I will tell you that I am in the last days of my second semester and about to start my third but until then it is ALL EXAMS. I feel really enthusiastic because here at Casa Mosqoy they call me the Prince of Rice because I am the best at cooking rice for a large number of people. I am nurturing a lot of knowledge of my major, gastronomy and culinary arts, and the class I like the most is Nutrition in which we learn about the chemical composition of all foodstuff, food borne illnesses and infections, and types of foods that can be recommended according to the ailment. For example, the sodium diet and diets low in protein which are directed towards those people that suffer from cardiac diseases and many other things. Time is passing so quickly and I realize that I need to reinforce my knowledge with studying. I hope that one day we can all meet one another. Take care and hugs from a distance!
