Senovio (also known as Fredy) is from Cancha Cancha, a tiny rural community that has no road and very few amenities, at 4000 metres above sea level. Senovio has lived independently from a young age, and graduated high-school despite all odds because of the incredible support of community members who took him in as his guardians. His ambition shone, as he worked on their farm, translated into Quechua for community-based tourism groups, and completed a permaculture course - all before graduating high school! Now, we’re excited that Senovio will be able to continue his educational dreams with Mosqoy's support, pursuing Culinary Arts at Blue Ribbon Institute - one of the best chef schools in Cusco. Senovio wishes to open up a local restaurant chain across the Sacred Valley upon graduation where he can one day employ more students from the Mosqoy Youth Program, and then eventually continue his studies further in International Business Administration. He is also learning English and German, and hopes to learn many more languages!

Dear Donors,

I hope you find yourselves healthy, as well as your loved ones and family. I am Fredy Zenovio Ccarhuani Mamani. I am writing to thank you for the economic support you’ve provided me for my academic development, which will allow me to become a professional.

In these very difficult times in Peru because of political and economic instability caused by the current dictator president that we have, these months in my degree (gastronomy) have been affected. There is a shortage of supplies in my cooking internships. During these months, I’ve begun in-person classes for all of my courses. This month, I completed my fourth semester with a gastronomy specialty in seafood. I really enjoy my classes because now they are in-person, and I can learn a lot more from my chef teachers. I continue learning new technical skills and the history of different dishes.

On the other hand, in Mosqoy’s house where I live, we have some financial problems so Mosqoy is unable to provide all the services originally offered to us. The political problems in Peru are affecting all of us.

I say goodbye to you, thanking you, donors, and wishing you a lot of success in your daily lives and that you are healthy in the coming years. Thank you.

Dear donors,

I hope that you are well and healthy. I am Fredy Zenovio Ccarhuani Mamani. I write to thank you for the help that you bring so that I can continue working towards my future and accomplish my dreams.

In this pandemic, for me it was a bit stressful and also with a lot of joy because I started my studies that I love a lot and as of now, I’m attending in-person classes twice per week. In January 2022, I will finish my first semester as a student of gastronomy, but so far, we haven’t attended in-person classes 100 percent of the time because in our country it’s a bit complicated with the pandemic and government that we have.

For me, I like the degree that I’m studying. It really satisfied me to learn new things like new cuts, different types of preparation methods, and the history of different Peruvian dishes. But also, how to measure portions for each plate, good practices for measuring food portions, how to properly store each food product, and how everything has to be done in accordance with the proper norms.

My dream for next year is to continue studying and learn new traditional Peruvian recipes and make them in my own style. I also want to work while studying to gain new experiences.

Dear Donors,

I am a student of Mosqoy, and my dream is to study gastronomy and in this way to create a company that consists of an organic culinary chain that, with the help of Mosqoy, will become a reality. I am interested in this career because I like to experiment and discover new recipes, as well as to share my experience with my community and learn new languages.

My experience in this pandemic is that a person depends on others in different ways whether it be food or education. I especially feel frustrated because I can’t start my studies because of the pandemic.

Espero que se encuentren bien. Soy estudiante de Mosqoy mi sueño es estudiar la carrera gastronomía así de esta manera difundir una empresa que consiste en una cadena de gastronomía orgánica que con el apoyo de Mosqoy será realidad.Estoy interesado en esta carrera porque me gusta experimentar y descubrir nuevas recetas de la gastronomía también difundir experiencia con mi localidad, asimismo intercambiar lenguas con diferentes culturas.

Mi experiencia en esta pandemia es que una persona necesita de la otra persona de diferentes maneras ya sea con alimentos o con la educación, yo especialmente me siento frustrado por que no puedo empezar con mis estudios superiores a causa de la pandemia.
